The prestige cuvee of Ayala is made with the base wine of the Blanc de Blanc blended with 20% Grand Cru Pinot Noir. The wine is aged in the cellar with a natural cork closure.They believe that this controlled interaction with the air develops greater complexity and aromatics. The disgorgement is done entirely by hand.
