The Zero Dosage is the Brut Majeur but without any added dosage. High dosage is sometimes used to cover up green and unripe fruit. The success of a non-dosage requires the best possible fruit and much more care to detail. It is much more costly to produce, but this is a classic example of what can be achieved. It has a vibrancy and purity of fruit which is refreshing and would match shellfish perfectly.
