Bundaberg Rum is made from cane which is harvested from Queensland, then crushed with the resulting molasses refined, then fermented and twice distilled. The Bundaberg Rum 8 Year Old is then matured in oak for 8 years, which means it was sealed on oak just after the millennium. Upon opening the bottle, you are confronted with a strong smokey caramel nose, which the company says represents the burning cane fields in the North Queensland. It does smell rather complex, and is something really special.
